Today’s Simple Dinner – Unpolished Brown Rice & Watercress Soup

Finally, hubby and I have finished with the moving and settled down quite comfortably at the new place. From a wooden house in a village to a 3-room rented flat in a little town.

Tonight I started cooking Chinese meal at home. With a rice cooker and a slow cooker, I managed to cook a pot of rice and a soup.

Hubby and I love unpolished brown rice very much because of its abundant nutrients such as protein, natural fiber, calcium, vitamin B complex, plant-based fat and other vitamins and minerals. In other words, brown rice is considered the ‘complete rice’ that provides a complete diet without throwing away the essential nutrients.

If you are plagued with constipation problem, give unpolished brown rice a try.

There are many brand names of unpolished brown rice available in Malaysia. Currently, I am eating the eco Brown’s ORIGINAL unpolished brown rice. (Of course, the Eu Yan Sang VINIGEN Apple Vinegar also works great when it comes to improving constipation problem. :-) )

As for the soup, I cooked the Watercress Soup . Due to moving house and hot weather, it’s better for me to cook this soup that helps to cool down the body heat.

The Watercress Soup that I cooked tonight was with chicken rib and red dates only. Just came across Wiffy’s Watercress Soup recipe and saw that I could add carrots, Pao Shen and wolfberries! Mmm, learned something today.

Hubby loves Pao Shen aka short American Ginseng or Hua Qi Shen very much because it can ‘cool’ him and improve his sleep.

Ingredients:

1/2 chicken rib, chopped and skin removed
500g watercress (We love vegetables very much!)
20 pitted red dates (We love red dates very much too!)
1 litre water (Hubby doesn’t like soup, so this amount of water is for myself. :-) )

Instructions:

1. Place water, red dates and chicken ribs in slow cooker and simmer for about 1.5 hours.

2. Add watercress leaves and stems. Continue shimmering until the watercress leaves and stalks are soft.

3. Season with salt if needed.

What a simple dinner, right? Healthy and simple dinner for two.

There is still a bowl of Watercress Soup left in the cooker. I am going to add some noodles into it tomorrow morning so that it becomes a noodle soup for hubby’s breakfast. Wow, this is so money saving!

Eu Yan Sang Brown Rice Vinegar Or Plum Vinegar?

Gosh! Hubby and I have already finished the 3rd bottle of Eu Yan Sang VINIGEN Apple Vinegar. Within 2 weeks!

I think this has got to do with hubby who always pours too much. This means we are going to finish the 4th bottle of apple vinegar pretty fast if hubby doesn’t control the amount he pours out each time.

For your information, we don’t use any spoon to measure the amount of apple vinegar. If it’s too sour, we will just add more water into it.

I have enjoyed the benefits of drinking apple vinegar like reducing body heat and constipation, and bad morning breath.

However, I haven’t slimmed down yet. I don’t blame the apple vinegar which is supposed to help me slim down by increasing the metabolism, dissolving excessive fat throughout the body and flushing out toxins from the body.

I put the blame on myself because of my sedentary lifestyle like sitting at my computer desk most of the day and not doing any exercise at all. ;-)

Once hubby and I finish the 4th bottle of apple vinegar, it’s for sure that I won’t buy two bottles of apple vinegar. Instead I will buy a bottle of apple vinegar for myself and a bottle of brown rice vinegar or plum vinegar for hubby.

I haven’t decided if I want Eu Yan Sang VINIGEN Brown Rice Vinegar or Eu Yan Sang VINIGEN Plum Vinegar.

Brown rice vinegar works to lower blood pressure and enhances liver functions, and thus easing away stress and tiredness while plum vinegar helps reduce the uric acid levels and improves insomnia and digestive problems.

I want the one that works best to improve hubby’s liver, sleeping, and digestive problems so that he is not easily tired. So, which one?
